I can't believe it's been months since I last posted a recipe! But here's one now. I made these yesterday after asking one of our fav restaurants to give it a bash ( still waiting guys! ). I couldn't wait any longer. Here's my version of Cajun Burger Patties ( vegan of course ). If you're gluten intolerant add 2 tablespoons Chickpea flour in place of the two slices of brown bread.
Ingredients:
Makes 6 patties.
tbls = tablespoons
tsp = teaspoons
1 can of red kidney beans, well drained, rinsed and dried off in a tea towel then roughly mashed. Set aside.
2 thick slices of brown bread
1/4 cup soy milk, nut milk or water
1/3 cup grated carrot
1/3 cup grated baby courgette
1/2 cup grated, or finely chopped sweet red pepper
1 cup grated onion
1 large clove garlic, grated.
1/2 cup sunflower seeds, raw or toasted
1 tsp salt
1/2 tsp black pepper
1 tsp mixed dried herbs ( origanum, thyme, rosemary )
2 heaped tsps paprika p0wder
1/4 tsp chilli powder or 1/2 tsp cayenne pepper
1/4 tsp cinnamon powder
1/4 tsp grated nutmeg
2-3 tbls canola, sunflower or olive oil.
Mix all the ingredients together ( hands work best ). Form into six equal patties and place on lined tray ( I use ordinary wax paper ). Refrigerate for a few hours , or pop in the freezer for an hour.
Shallow pan fry, or bake at 350 f... for 10-15 minutes each side.
They are a little 'soft', so handle with care.
